1 fresh ripe papaya
2 tbsp lime marmalade
300ml double cream
3tbsp Papaya Juice DrinkTo serve:1 small fresh ripe papaya, peeled
and cut into thin slices
Half a fresh pomegranateMethod Arrange the tartlet cases onto a tray.
Roughly chop the papaya and place it in a
blender with the lime marmalade. Blend into a
smooth fruit puree and then spread a little over
the base of each tartlet case.
Whip the cream until it forms soft peaks and
then fold in the Papaya Juice. Whip the mixture
again for a few seconds until it holds its shape.
Spoon the mixture over the fruit puree and level it
off with the back of a spoon.
Finally, to decorate the tartlets, arrange fresh
slices of the papaya on top of each tart and scatter
with a few pomegranate seeds. Papaya and
