250g potatoes
2 tbsp olive oil
8 cherry tomatoes
1 courgette, sliced
2 tbsp pine nuts
2 x 50g goats8217 cheese, sliced
Handful rocket
2 tbsp basil oil
Method
Bring a large pan of water to the boil. Add the potatoes
and cook for 12-15 minutes until tender. Drain. Heat the
oil in a wok or large frying pan. Add the cherry tomatoes
and courgettes and stir fry for 2 minutes. Add the
potatoes and pine nuts and stir fry for 3 minutes. Add the
goat8217s cheese and let the heat from the pan melt the
cheese slightly. Serve immediately topped with the rocket
