tier on tier, where brides (and guests) risked
breaking a tooth on rock hard icing! Today8217s
wedding cake is a veritable work of art and just as
tasty to eat as they are to look at.
Trendy bakeries now offer a host of options,
ranging from cheesecakes, truffle torte, rum soaked
sultana and carrot cake, sponge cake layered with
ganache and buttercream, spice cakes, even liquor-
flavoured cakes. Some couples even incorporate a
different type of cake for each layer 8211 after all not
everyone8217s tastes are the same.
If your budget will stretch, you might even want
to consider smaller cakes for each table 8211 still
beautifully decorated of course. This doesn8217t have to
send your budget spiralling either as you can use
them instead of a floral centrepiece. Some couples
have them baked with different fillings and flavours
and invite their guests to slice and sample different
cakes at different tables, which of course helps
break the ice between guests from different families.
Motifs can include doves, gold rings and
horseshoes, the latter symbolising good luck, but
remember achieving a dense, strong cake that can
support the decorations while remaining edible is
